Just a tip for those who don’t want to have to buy powdered sweetener and regular sweetener. Just take your sweetener and put it in a food processor or a blender, there you go you got powdered sweetener!!

Mayra, I made this cheesecake tonight ahead of Easter! I increased the ingredients by 1.5 to fit into my larger cheesecake pan. It turned out AMAZING!!! I also found the zero sugar added strawberry preserves to serve on top. I'm sure none of my guests for Easter will guess this is a Keto dish! You are amazing! I hope you put out a cookbook soon!

I'm not on keto YET, but watching Mayra makes me want to try it... How do you stop at one slice of this cake? On keto, do you have to be aware of calories, as I used to be on Weight Watchers, and every calorie was accounted for each though it was low fat? Thanks

I would say you have to be aware of calories if your main goal is to lose weight….. but I have days on keto where I will eat a slice of this cheesecake for breakfast lunch and dinner 😂😂😂 I still lost weight 🤷🏾‍♀️ but I guess it depends on your specific macros.

I make it in a muffin pan , then I can make mine and my family's at the same time. Also using cupcake liners for easy cleanup. When I make it in the springform I do a water bath under it to keep it from cracking.

My macro numbers came out as follows… cut into 8 slices. Approximately 9 carbs a slice and 386 calories, fat 17, protein 4. I counted butter instead of ghee and included 1/2 cup strawberry jam and fresh strawberry’s. Yours may be different based on ingredients and slice size.

Made this yesterday. The cheesecake was good. I doubled the crust as you said to fit my 9in pan. I think it was a little too overwhelming. The crust seemed to not cook that well and was too thick. I precooked the crust as you did and even left it in for a couple minutes more. Surprisingly it still seemed a little undercooked. Next time I'll do the regular amount of crust and see how it turns out. Overall I would definitely make this again. ❤️

So I'm making this cheesecake for the fourth time. It always turns out delicious. I was just reading the recipe and not watching the video and made the mistake of putting the monk fruit sugar in the batter. I wish the directions on the website told you exactly what sweetener to use. It's so crazy I had the powdered sugar on the counter cuz I remembered that I needed it😅 There's a hyperlink to the sweetener, but I just wish it said powdered sugar. I still think the cheesecake is going to taste great, but we will probably just taste the granular of the sugar.
