Fyi if you're feeling brave 😂. You can normally pull it out of the oven at about 155 and let it rest. Meat is still cooking while you pull it out of the oven. It generally gains about 10 degrees after you pull it out. It's up to you but it does help with having it still juicy juicy

@@maticulex5713 yeah it does lol. The oven is at 350. There's still residual heat inside the bird. Therefore the temperature raises. It's pretty basic science. All chefs and most cooks know this. Take a medium rare steak and throw it under foil for ten minutes and cut it open it won't be med rare anymore. Same basic concept. It's not really hard to understand.

@@maticulex5713 you obviously don't know about cooking. Stick a thermometer in any meat when you take it out and stare at it and watch the temperature rise. Lol. Generally larger pieces of meat gain about 10 degrees when you take it out. You ever watch or been around anyone that actually knows how to cook? You've never made a perfect prime rib in your life I can tell by this comment.

Only thing I would do differently is ad a trivet or something to raise of the bottom which would be hard in that dish but I’d figure it out

I just cooked a Cornish hen on the smoker with Koji . Two oz and left in refrigerator overnight. Took out and rinsed off. Levy in refrigerator for two hrs. Smoked at 345 for 45 minutes. Amazing!
