Hey George, have you ever tried adding some lemon zest to your mix? Pretty much towards the end of your cook, for the amount you had in the pan, I'd grab a pinch of lemon zest and stir that in... You'd be amazed at what that does with tomatoes! And a trick I use for cutting basil or other long leaf herbs, lay them flat on top of each other, then roll them like a cigar, then do your cutting. You'll get nice long thin strips, and it stays put so you're not chasing it all over the cutting board! Looking forward to more cooking!
