Like a lot of people said, use a light gear ratio to trade some torque to some rpm. the 3 blades version is the most efficient (the 2 lacks surface and 5 constrain the water flow too much) so stick with it but try a bigger diameter or put 2 on the same axe (like 4 studs apart) to increase thrust. If you're not gonna use vanilla part then try toroidal propellers too. You can aslo use a rubberband as a pulley instead of a shaft to try to reduce drag under water.

You designed nice looking but inefficient propellers. They are used at very high rotational speeds since their profilenose eases into the water instead of having a rather broad line cutting into it at the same time. So you probably need three to five times the speed, to get the most out of your design. The size is really not the problem, they are well sized. But you might be limited by the maximum pressure and torque they can withstand. Also the pitch is not necessarily ideal at 0° in the water. It depends on how deep your propellers are submerged and how the weight is distributed along your boat i.e. the point of gravity.
To go faster you should probably have less drag in the water. Maybe move the centre of mass back as well. And different props. It depends on a lot of factors which props are most efficient, so do lots of testing as well.

Adjust the gear ratio for more speed than torque. Maybe it takes time for it to hit top speed but it helps getting faster atleast, I hope.

First one to do what you first want to do is use lighter materials second of all use lighter motors, but still stronger ones. If you want the stronger motors then put in more Lego floating items as it will balance the buoyancy, making it lighter and glide next put a spoiler at the back it will help toblind it across as it makes it easier. Add at least four motors two for each side if you really want a nice glide, put a triangle shape in front, directing all of the waters to towards the sides, allowing it to glide forward, and remember to put some floats on the bottom in between those two.

The GPS isn't very accurate: it has trouble measuring slow speeds because the resolution is on the order of a metre. You could get more accurate measurements by timing how long it takes to move between two fixed points. You could put some poles in the sand sticking up out of the water to denote start and finish lines. If you want to measure top speed, just taking a running start so that you are up to full speed by the time you reach the starting point. This is how water races are historically done: buoys denote the start and end and the outline of the course.

Get 2 more hulls and make the boat longer, in displacement mode like this you should gain sqrt(2) x more speed. Hull speed is ~1.34 x sqrt(length at the waterline) The longer the hull the faster you go. If you can make the length:width ratio >8:1 you can start to exceed this. TL;DR - make it longer.
