It looked like Barangay Hulo is preparing for their annual fiesta. Video-evoked nostalgia is what we’re feeling right now. We found ourselves falling through our memories back in time upon seeing the colorful fiesta banderitas (decorative buntings) on your video. Fiesta was the most celebrated and important event in our barangay back in the 80’s, but the tradition seem to have faded away in the 90’s. It’s great to see that some barangays to this day and age are still practicing the fiesta tradition. Your videos are indeed delightful to watch and it really meant a lot especially for some OFWs or Filipinos who have been away from the Philippines for a long time and missing our home country, it somehow bring us closer to home. TA-LI-PA-PA is another word for small wet amrket po. Pretty much every baranggay po have their own talipapa po. Within the perimeter po the talipapa marami din pong karinderya. You may want to check out din that place po. Ingatan mo po ng tyan ah. Isaw one video mo po na you bad an upset stomach, normal po yan when you are out in the heat alot. 😂

7:25 lechon kawali literally means “lechon (cooked) in a pan” so it’s dry, it’s fried. While lechon “paksiw” is cooked in a gravy like sauce, “paksiw”just means anything that’s “cooked with vinegar and garlic”. Lechon kawali is usually cooked with either the left over cuts from the whole roasted pig or traditional lechon, or left over lechon kawali.

9:38 lugaw, think of chicken soup. The base soup is chicken flavor, usually make with stock then you add the cooked rice or sometimes you sautee the raw rice with garlic onion and ginger with a little oil then pour the stock over and cook until rice is done and nicely puffed. Add toppings like hb egg, green onions, toasted garlic and onion, crushed chicharon on top to finish off. The lechon kawali is just a variant topping or side dish.
