@@davidpotts1778 what hot dogs did you use?
@davidpotts17784 жыл бұрын
@@donteprince2891 they were wikinger hotdogs from tesco. They come in a glass jar. I sauteed them in a dry frying pan and added beer once almost cooked. Not to much beer just covered them and let the beer evaporate then added more. Added to the buns and topped with chilli I made. Dead easy and tasted great!! The first time I made them I followed a recipe from KZbin and couldn't taste any difference but this way was great . Enjoy

We only had one visit to Lum's about 10 years ago, mostly out of curiosity (Bellevue, Ne) after a day at the Henry Doorly zoo... And I didn't even get a dawg that day! Wish I'd known then what I know now. Thanks for watching, Rus!

I grew up on Lum’s in Cincinnati in the mid-60’s to late 70’s. We also loved going to them in Dayton and Hamilton. They were always considered a favorite and my parents took us there often. Probably only Frisch’s and Skyline Chili got more of our family business. Lum’s beer dog flavor stuck in my mind all these decades and I can still “taste” and smell that steamy beer aroma if I close my eyes and think about it!! I’ve been making homemade Lum-dogs forever.....I always use full strength undiluted Budweiser (cheap and the original recipe brand) even though the actual recipe calls to dilute it 3-1 with water. Never saw the wisdom in that! I wish they were still in operation, and I’m frankly surprised no one has copied the basic recipe and retail approach......Beer steamed hot dogs are wonderful!

Hi Dan! I have a vague memory of Lum's from trips to Florida. It's sure sad to think a great hot dog like this will be forgotten. I also feel a special sadness over the loss of Howard Johnson's and their tender sweet fried clams. Your resurrection of this special hot dog was impeccable! The spiral cuts, the Zip Line craft beer, the onions, the heated grate, the Saverne Artisanal Kraut.... you went all out and the results were worth the effort! All I can say is GREAT JOB!!!
@SmokeyGoodness5 жыл бұрын
Thank you, John! A funny thing happened when I was typing in the tags for the video. I got a warning from Tube Buddy that there could be the risk of demonetization if I used "Saverne Artisanal Kraut" as a tag! I've never seen anything like that before. 10+ years on you tube and I thought I'd seen it all. Thanks for watching!

I saw Deniro buying Pacino a couple of Lums beer steamed dogs with chili in the film “The Irishman” .. it looked so delicious that I came to KZbin to look it up .. I’m all the way in the desert of Southern California , but it’s still a sad shame to hear that this institution closed its doors for good back in 2017 .. I might never be able to try their famous beer steamed dogs , but I’m grateful for this video recipe!! Thank you and cheers!

Goodness, I’m truly sorry but this video while well intentioned I’m sure isn’t accurate. I’m sure this is a great hot dog, it looks like it might even be a better hot dog inspired by the original. However, Lum’s hot dogs weren’t any dog’s, they were Hebrew National All Beef 1/4 lb. The dogs were never scored. It may have been something one of the last store owners created. They were never steamed or boiled in onions. In reality the innovation in those days was to utilize a 30 lb countertop fryer filled with water to cook them incredibly fast. The beer came from the draught beer systems in those days being very inefficient and combined with the use of frozen beer schooners a great deal of beer head was developed. The Perlman brothers never wasted anything so they used to dump the excess head into a pan then dump the deflated head/beer into the fryers. When it was busy they’d crank on the thermostat and the combination would boil almost instantly and the all beef dogs boiled in beer were great. The buns were kept in perforated pans in a steam table along with pans of sauerkraut and chili. The chili was actually made from McCormick chili seasoning. The “Steamed in beer” was a misnomer that was a brilliant marketing slogan. Again I’m sorry to disagree but I owe it to my father. My father was hired as an assistant manager and helped open the 2nd Lum’s with the Perlman brothers and worked tirelessly for them and John Y. Brown until the Weinerwald company bought them. Which was over 20 years. He eventually oversaw all the Lum’s in South Florida. I started working for them in 3rd grade as they had me opening the doors for their customers at store #11 for .25¢ an hr. Big money for a little kid. I was raised in the chain learning every position and eventually becoming the GM of the Miami Beach store and the 163rd Street store.

If this is the authentic Lum's recipe, then The Irishman got it wrong. The method here is basically scoring the dogs before adding them to a beer-based stock and boiling them before grilling. In the movie there's no boiling, just beer poured onto the dogs as they're grilling. Neither method is 'steaming', technically.
