1:55 "NO" "YES!" This is my main issue with veggies/vegans. People can feel free to eat whatever they want but don't act like your lifestyle choice fits in with every meal or recipe. Tofu chilli would be fucked and anyone with a brain knows that. Any and all Chilli con tofu's I've seen have just been a vegitarian chilli with chunks of tofu in it. That isn't a tofu-based chilli, that's chilli with chunks of tofu thrown in. I'd have literally no problem with them whatsoever if they could just be honest about shit and not try to act like every single meal recipe is just as good or better. It's not.

I used to use a potato masher but I was worried it would harm my wife's non-stick pans so I went in search of a pan friendly version. After a while I found a "ground beef chopper" on amazon for under $10. Works great and it's silicone so it cleans super easy.

Sam, if you want your ground beef to have the smallest possible size do this: Put the *cold* ground beef into your KitchenAid mixer. Break it up with the paddle attachment for a few minutes. Then add about 1 cup tomato *juice* per pound, slowly, while continuing to mix. It will slowly form into a big squishy bowel of thick 'slurry' . Now, cook *that* down, stirring frequently, until nearly all of the water from the tomato juice is evaporated and the burger begins to brown. Drain off the fat, then just continue your recipe as normal. I swear to Christ it works,

I love how you give recommendations for alternate proteins for the chili. Cooking is just as much experimentation and improvisation as it is a science, and personal preference can influence what one uses in any given dish. As a Texan, I know that “beans don’t belong in chili.” But, also as a Texan, I like to put beans in my chili *IF* the chili itself is the meal. If the chili is used as a topping or other ingredient (like in chili dogs), then beans are a no-go. it makes it unwieldy.

True Story: Like 15 years ago when my wife and I were newly married we had just bought our house. The yard needed a Ton of work. We had a one year old and a new born, so while she watched them, I had a day of yard cleanup ahead of me. It was a hot July or August day, and the humidity was thick. I was out there for hours and I sweat my ass off and got filthy, but it was great. I finish up, come inside to give my baby boys a hug and a kiss and tell my wife to go check out the progress. She comes back in and tells me it looks great and is so proud of how hard I worked that she will go out right now, get me a 6 Pack of O’Douls (I don’t drink alcohol) and ANYTHING I want for dinner. I tell her, I want Chili Dogs. Chili Dogs it is she says. The boys go up in their cribs, I hit the shower, she goes to Whole Foods. She comes back a little later, Hands me an O’Douls and starts on my meal. About 15 minutes later she hands me a plate and says here’s dinner. What’s this I ask? She said Chili Dogs Really? Yes really What kind of Hot Dogs and chili is this? I got you Turkey Hot Dogs and Vegetarian Chili. I was crushed, absolutely crushed. It was as awful as it sounds. The O’Douls was good though.

pjbuma13 there was, but that was all mixed in to make chili. you’re not gonna get the separate taste of mustard as you eat it that way.... plus the mustard I’m referring to is traditional yellow mustard put on top of the chili dog... it’s a great pairing that I’d miss if I had just a plain chili dog like this, but that’s just my own personal taste. The cheese does help though, it’s just a different thing. (I prefer an awesome thick melted cheddar cheese sauce though, so good!)

I put my onions under the chili so they don’t fall off as much. Doesn’t look as good for presentation, but eats better. I also ALWAYS put some kind of mustard on my hotdog with the chili and onions. I realize there’s some in the chili, but I need some on the dog too.

Sam I cut my hotdogs on a diagonal too! I grew up in Columbus Ohio. We ate Coney dogs in the 60's & 70's. One secret to the Coney sauce is not to fry the meat. Saute finely minced onions in butter or oil first, then add the meat with a little bit of water or beer keeps the meat from browning and turning hard because it breaks down the fiber that holds the meat together. (I'm sure you know this?) I sometimes use a potato masher to make sure the meat is finely broken down. I make mine with ground turkey on turkey dogs. I add a little mashed pintos or leftover refried beans, cumin, tomato paste, along with onion, garlic in my sauce. Another secret for coney sauce is smushed up Vienna sausages. I just use toddler turkey dogs from Earths Best or Gerber. They are just like the Vienna sausages without all the nastiness! 😝 😄 I really enjoy your cooking shows. I turned my husband on to you. We find you fun, interesting, likable and very creative in the kitchen indoors and out. (It's my dream to have an outdoor kitchen one day). I'll be 59 on October 30th! So after 5 children and 4 grands (so far), I better hurry up! 😄

Looks nice, but I've got to say I was confused about the omission of cumin, at least SOME additional quantity of it. I didn't think it was an optional ingredient for any chili. Chili powder as a pre-mix does often contain cumin, but not nearly enough. It also contains onion powder and garlic powder in most cases as well, but I noticed they were also added in as a supplemental way. I kept waiting for cumin to come up, but then we moved on to wet ingredients and now I have cumin blue balls. :-(

@Chris Licata I know what you mean about the cumin in chili. This is a hot dog chili meat sauce. In Sam's defense, I believe the flavors from the bacon and the diced minced chipotle peppers were supposed to be a sub for the smoky cumin flavor.
