INGREDIENTS :
400 g Field marrow (Moghem) /Southekai
1 sliced onion
1 chopped tomato
4-5 vonti sola /Vaate huli (souring agent similar to kokum / binda sola )
salt to salt
1 tbsp. chili powder (more or less)
pinch of turmeric powder
1 tsp coriander powder
1 tsp cumin powder
1 tsp crushed pepper powder
FOR THE SEASONING :
3 tbsp. oil
4-5 small garlic crushed
1 tsp mustard
3 dry red chili
few fresh curry leaves
METHOD :
Wash the field marrow and cut into quarters, remove the pith and seeds and then cut into cubes.
In a cooking vessel add cubed field marrow along 2 cups of water, salt and cook till half cooked.
Now add all other ingredients mentioned above, give a good mix cover and cook on medium heat till field marrow is tender.
For the seasoning, heat oil in a pan , add crushed garlic and sate for few seconds. Add mustard and when its stops spluttering add dry chili cuts, curry leaves and sauté for few seconds. Pour this seasoning into the saar/curry and cover the pan immediately to retain the fragrance of the seasoning.
Serve hot with rice and enjoy .
