Well actually the trend started with the new super Mario bros games. Super Mario Bros 1-3 plus lost levels at least had unique bowser battles with a different mechanic each fight. Now it's just wait for bowser to jump, hit a switch, then battle big bowser. Hopefully the next new super Mario bros game breaks the trend and makes the final bowser battle semi interesting.
