I was really happy to find this after finding the mac version of uiflow can not save python, then going a different route the Arduino library to the M5stack stepper board not working and also the vscode support for macOS not working, this was the first thing that worked relatively flawlessly that got motors spinning. Thanks.

Thanks for this, Luke. In the 3:18 mark of the video where you try to download the flow.py to your computer and it failed, try switching to a folder on your computer like /Users/{username}/Downloads within the "This computer" panel on the bottom left of the IDE. That worked for me to transfer files from the device to the computer. I assume it failed for you since you tried to copy the file to the "/" location and Thonny didn't have access to write it there.

Is there a specific reason why, when programming the M5Core in Thonny, the LCD screen is not working?
