Mackerel Rundown (Run Dung) is another old time Jamaican recipe mostly eaten for breakfast. The “rundown ” name comes from cooking down the seasonings in coconut milk until slightly thickened. Salted mackerel is pre-boiled twice to remove excess salt, It is then cooked down in natural seasonings such as onions, tomatoes, green pepper, thyme and scotch bonnet peppers along with the coconut milk until slightly thickened. Try it and enjoy.😃
