Quick, simple & delicious meal! Recipe requires very little prep work! You will love this dish!
Ingredients:
•3 tbsp. extra virgin olive oil
•5 garlic cloves, cut in small pieces
•a handful of fresh parsley, chopped
•a few handfuls of fresh basil leaves
•salt
• crushed chili to taste
•1 tsp. extra virgin olive oil for pasta water
•500g Pastificio Garofalo Mafalde pasta OR any other long pasta
•796g organic whole peeled tomatoes
•grated Parmigiano Reggiano to taste

Procedure:
1. Cut the garlic in small pieces.
2. Add extra virgin olive oil in a large saucepan. Heat over medium heat. Add the garlic; cook for 1 minute over medium heat. Add the whole peeled tomatoes. Rinse the can with a little water to get all the tomato out. Crush the tomatoes with a wooden spoon. Add salt, chili, parsley & basil. Cook for 30 minutes over medium heat, stirring occasionally.
3. Bring a large pot of water to a boil. Throw in the mafalde pasta, or any other long pasta. Garofalo Mafalde cook in 11 minutes. Add 1 tsp. of olive oil to the water. This will avoid the pasta from sticking together. Add salt to taste.
4. Drain the mafalde & add them to the saucepan. Toss them around to mix in the sauce. Add grated Parmigiano Reggiano cheese. Toss then throw in a handful of basil leaves. Toss again.
5. Plate & top with more grated Parmigiano Reggiano cheese.
