a very simple and still practical version of the key trick at 2:42 is that they are attached upside down to the back of his thumbs. The reverse/reaction shot might seem to disprove it and show him holding the key normally, but the reaction shot was filmed separately and no disappear/reappear is actually done in that shot.

Peppers ghost is used in multiple rides, the haunted mansion being the most known. The many adventures of Winnie the pooh is what first comes to mind for me. Its used when pooh falls asleep before the heffalump scene. Also the fairy when she appears in the pinnocio ride.
