I made them last night!😀. I even made the five spice powder because I forgot to buy a mix but I had the ingredients. My wrist hurt after mincing the chicken finely with the cleaver...but it was perfect texture. I think using the food processor would have made it mushy. The dumplings turned out beautiful! The only problem I had at first was that the dough was too stiff. I also need to get that small rolling pin like yours to make it a little easier. I used a larger one that I have and it took more work but I figured out the technique and they were all pretty round in the end. I tried cooking some in a pan with oil, some steamed, and the rest boiled. I think the boiled ones kept their color the best, so probably that's why you chose to boil them.😉 Next time I have to do this on my day off though...I did it after working all day and stayed up late. 😄 谢谢
