Magnetic Flow Meter Technology Introduction

Magnetic flow-meters are only suitable for conducting fluids. The principle is that the fluid is exposed to a strong magnetic field perpendicular to the direction of flow. A voltage then results in a direction that is perpendicular to the both the flow and the magnetic field. This voltage is proportional to the speed of flow.

Hello, i want ask how is measured the voltage? I particularly understand that positive particles are sent to one electrode and negative particles are sent do another electrode, so electrons are sent to one conductor and to the another conductor is sent what? I don't understand what determines that one electrode is anode and another electrode is cathode.
