The first recipe my grandma taught us as children was how to make the ideal Ilambazi (Porridge). The cook had to put all of his or her effort and time into making sure that this dish didn't lead to an Imboza (Badly cooked meal) since Magriza (Grandmother) would demand that this was the first meal of the day. To make one's day as productive as possible, Magriza would highlight that the first meal of the day offered a crucial setting, therefore it was vital to be as exact and careful as possible.
She made us fall in love with these 5 options:
1. Isathiyane Option| Sorghum mixed with Milk of a cow that has started to breastfeed
2. Ilambazi Elimhlophe | Maize Meal Option
3. Uphoko Option | Finger Millet
4. Busika Option | Tamarind mixed with Pearl Millet
5. Baobab Option | Mixed with Pearl Millet

I just found your channel. I am from Nambia and it is interesting how cooking methods and grains are very similar. Luckily I grew up in a family with parents who were pro-culture so even though I grew up in the city we ate our traditional food (I also learned to cook them) and speaking my mother tongue. Alot of my generation have lost not only the language but used to look down on eating local food. It is only in recent years that they see the value in it. I can't wait to see how far your channel goes.

Haven't tried the baobab powder but Momza brought the 'busika' from Zim. It has a nice tangy taste to it and makes the porridge nicely sour. Highly recommend it. Better to sieve it from the water though as the strings from the fruit can be annoying if you swallow them. Thanx Chef. Disclaimer: We need more men in the kitchen// -It's not a recipe.- I always erroneously say. Food preparation is felt in the soul💋💋💋
