Hi - I started by experimenting with a passion for baking. I've got no formal training, but have done cake decorating courses (2-3 day courses mostly) with some of the best decorators in the world and have learnt a LOT over the past 5 years. I reckon I've spend $20K on courses all up, and I make wedding cakes, cupcakes and novelty cakes for a living so I get lots of practice :) I'm also starting a 2 year Pastry Chef degree next month so I will actually be a qualified Pastry Chef!!

Hi Jessica, You can let it sit for a few minutes before using it it, and I would recommend using a spatula to scrape it up the sides. Dont worry if some parts are thicker than others, you can always add a little more chocolate to just those thin parts once the first and seconf layers have set - and they're never completely perfect thickness-wise :)

If you want to top a cake with giant cupcake, make sure you support the weight of the giant cupcake underneath with a cake board, and some wooden stakes through the bottom tier of cake so it doesn't fall through. You could also just make a hollow chocolate cupcake using red and green candy melts and sit that on top - it would be a lot lighter :)

You could fridge it if you wanted, and just add the big red 'cherry' and m&m's on top the day before you want to serve it. :)

Hi - I would use red candy melts, rather than trying to dye the chocolate. You can colour white chocolate with colour paste (not liquid) but this is really only suitable for pastel colours :)

You're right - this was compound chocolate, not couverture (which needs tempering). The non-shiny finish is caused by the silicone mould being peeled away and taking and shine with it :)

Hi - Just use straight cooking chocolate or any chocolate you like. Even blocks of chocolate is fine. If the chocolate is very thick when melted, you can add some shortening (like a hard brick of white/clear vegetable fat) to think it out a little bit but most chocolates wont need this :)

I used dark chocolate but you can use any type you like. I wouldn't use couverture chocolate though as it has a lower melting point, whereas compound (regular) chocolate will withstand higher temperatures and hold its shape better :)

Hi My 2 boys and I love your channel, we have just made this in white chocolate for my Husbands 40th birthday filled with his favourite choc's. We also made the pinata cupcakes. My only comment with the giant pinata is watch the consistency of the chocolate - the first layer I started the choc was far too liquid still. None the less it worked out fine and was very impressive when finished. What a great 'hit' :-) thank you.

You can if you like, but the fridge can cause the m&m's to sweat and loose some of their colour - I'm on the Gold Coast and just keep mine in a col dry place - they are pretty good up to about 35 degrees but I guess I would put it in the fridge if it was a REALLY hot day :)

Just as chocolate you buy in the store is not melted, just keep the Pinata in an airconditioned room if required and it will be fine. :-) Elise

Hi Cerise! Great ideas - welcome to the channel! I used regular chocolate (either melts or blocks are fine) but no chocolate chips. They are designed to hold their shape while baking and often don't melt as well :)

I use melted chocolate - so it's warm as it's just been melted. Its not a paste, its actual hard chocolate which has been melted to make it soft :)

Hi! I don't - I use a compound chocolate which doesn't need tempering. If you use a high quality couverture chocolate, you will need to temper. That being said - tempering isn't hard, it just take a bit of time and I can never be bothered - the couverture choclate is a nicer quality but definitely softer, and melts in lower temperatures than compound. I use Nestle chocolate melts most of the time, or a good brand of compound cooking chocolate :)

I had an idea. You could use white chocolate and add food dye to change the colors. That way you could have a pink patty pan and a blue swirl on top! I love the tutorials keep making them!

OK - it doesn't hang from the ceiling but is hollow, full of candy and you smash it to get the candy out. It's a cupcake version of a piñata but maybe not EXACTLY correct :)

Wonderful idea! I did encounter some probs tho - I used callebaut couveture callets, which is made for easy melting & moulding & is good quality & used by chefs, etc. It is usually very runny when melted so I didn't add copha. It was so runny it kept thinning out at the sides & pooling at the base. It also kept melting after refridgeration & hasn't seemed to set properly. What am I doing wrong? Will copha help it set? Or should I use a completely different type of chocolate?
