Make A Variety from One Recipe Part 2| Christmas Cookies |Tender Shortbread Cookies with Rice Flour

This is by far my favorite shortbread recipe. Tha is a slightly different recipe than part 1 but the instructions to make them remain the same. I developed this looking for a more tender crumb and it definitely delivers. It's delicate but still holds a shape for cut out cookies. Try it this holiday season. The sweet tooth peeps and even those who aren't dessert inclined will get weak in the knees. It'll easily become a new fave. My recipe is below- You're welcome 😚.

Tender Shortbread Recipe
1 cup unsalted butter
1/2 cup sugar
1 tsp vanilla - pure or paste
1 1/2 cups flour
1/2 cup white rice flour
Pinch kosher salt
Bake at 300F for 20-25 mins ovens vary
