Awesome attention to detail. It makes me want to try a similar setup with a home ice cream maker. It's the same concept: a rotary element that circulates liquid over a below-freezing mass and mixes the solids with the liquids. There's no active refrigeration, and I doubt it could hold a frozen drink at temp like the Slushi, but it could be a quick and dirty cheap way to achieve 95% of the same product: mix and chill cocktail with the right brix/abv, throw it in the frozen ice cream maker, and serve.

My guess is you would have to add a lot less than with the blended drink recipes in Tropical Standard, since the xanthan will hydrate more fully hanging out in a slushy machine than it does just getting spun briefly into one serving. But I’d be curious to see too!

I haven’t been willing to potentially waste a batch. Xanthan needs to be dispersed in a a vortex which means you’d need to use a blender to make your mix first. You could do that, but then it’s seems like you could just use the blender with ice. I’ve never seen anyone actually say that xanthan should be used in a slushie machine, but there may be some other emulsifiers more qualified for the job. But it’s really not as necessary in these drink as in blender drinks. These keep consistency really well and when they do separate it’s not as noticeable as a blender drink.

You can make those drinks it's just they'll need significantly more water. I've heard of slushie Manhattans. IMO, you don't want these drinks to be strong anyways. Most of the water you add turns to ice and its not like when you are drinking them that they have diluted the drink... you're basically consuming the ice as well (if that makes any sense)

I have just received a Ninja Slushi unit and tried making a Pina Colada using 3 cups of Pina Colada mix (Master of Mixes) and 1 cup of water. I did not add rum to the mixture ( added it to the glass instead). I chose the "Slushi" default setting and the mixture turned to slushi consistency in roughly 15 minutes without any "low sugar" alerts. I found that the slushi seemed to have more of a syrup-like consistency than what I would consider a slushi. I imagine (guess) that I will have a more slushi-like consistency by adding more water, but I am asking for thoughts / suggestions from the user community that might have already figured out the best proportions for this drink. You can take the recipe here and remove the orange liqueur and you'd have a Tommy's margarita style cocktail. Can't work in set ratios since you have to have sugar and ABV content in a set range for it to work.

Excellent video. So far, I haven't seen a video (including this one) on the Slushi that makes a beverage which looks with the smooth texture of a commercial machine. If you have a Creami, don't waste money on a Ninja Slushi.

This does make drinks that are identical to commercial slushy machines. You’re probably referring to how it looks pouring out of the machine - this has a pretty low total volume and doesn’t pour the same but the results are like a commercial machine. A Creami cannot do any of this. They’re totally different machines that do different things.

Thanks! I'd assume it works just fine. Anything within ratios that work should work well in any slushie machine. I don't have a mudslide recipe at this time and it's not on my agenda in the near future, but I'd suggest just taking your favorite mudslide and then reconfiguring it to work in the machine. Should work well.

There's a bunch of reasons why I wouldnt do it. First, I've only seen one frozen recipe online that calls for xanthan in a slushy machine and the reputable ones I've seen don't call for it. Second, to disperse properly xanthan needs to be added quickly like the vortex of a blender. And lastly, when I did add some it ruined the drink. Too slimy. Doesnt work the same in a slushy machine as it does in a blender.

1/3? Of what? A Manhatten? Most cocktails get dilution from ice which lowers the ABV. Most cocktails are served on ice, which lowers the ABV even more. A frozen cocktail (slushie or blender) you consume the ice as you drink it. They’re different kinds of drinks. Drink the entirely of a Mai Tai, Margarita or any other similar cocktail and you’re under 7%ABV Everything is relative, yet still not for everyone. If ABV is the biggest concern someone has then cocktails, beer and wine are not what they are looking for. Drinking spirits neatly is probably more desirable.

I think I overfilled the first time. I made a double batch of your margarita recipe and it only got kind of slushy. That or I didn’t wait long enough. Liquid was only a hair above the max fill line. Either way it was delicious but I think I have more learning to do.

The crutch to fix something that isn't slushing is to just add water. Not very scientific, but if it's not slushing it's probably too much sugar, alcohol, or both.

Have you noticed 'gunk' build up after cleaning the vessel in the area of the rear panel/opening? It's in the seam between the back panel and the rest of the tank. A few people on Reddit have, including myself. After using a fruit juice, the vessel now has a distinct fruity smell regardless of how much I try to clean it.

It’s hard to compare it to blender style because they are so different. The biggest downsides to this machine are it only does 64 oz (so like 5-7 cocktails) and while cleaning is easy it’s still a process. If someone was using it once a month then maybe not worth $300. But if you plan on using it more often and non-alc drinks then it makes sense. Making a slushy from juice, soda, etc is super easy. But it’s so damn hot here right now so I love it. Will I love it come winter? Probably not.

Thanks for the explenation. In the upcoming months i will be opening up my own bar, and there will be 2 slush puppy machines on the backbar for slushy cocktails. Have you thaught about the shelflife of these batches? When you use fresh lime juice for example, your batch will go bad in a few days (especially in my case when im closed and the freezing option is off). I’m thinking about using citric acids instead of fresh lime juices. Do you have any experience with alternative acids? If yes, would you be so kind to share them with me?

The spreadhseet will only work in excel, so that could be the issue. But the main thing is to use the green boxes for your inputs and then to make sure you have the correct ABV of your spirit and the correct brix for your juices and syrups. If you skip a step then it won't give you accurate numbers. I'll have a simple daiquiri video soon

Great video! Have a question though. Why not make just enough mix that you can use immediately. Once you've got it to the slushie stage, pour in as much alcohol as you want, let it spin a few times to mix it in, then serve immediately?

Not sure if I’m following exactly, but if you’re adding a room temp ingredient (your alcohol) to the machine that already has a mix at the slushie stage then it will drastically drop the temp and come out of slushie consistency. It’s not going to come back to the right temp immediately. Will take time. It also just probably wouldn’t work the way you want it to. The mix you start with would have too high a sugar % and the machine won’t work. Plus you want the water in to spirit to work with the sugar to make the right texture since most of your spirits are 60% water.

I made a spreadsheet for my slushy machine in my bar and I wish it was as advanced as yours. same principles. I find my customers prefer the drinks when theyre around 15 brix. but as soon as you adjust it's a crazy game of chasing the numbers up and down. also my machine makes a perfect frozen yuzu Marg at first (currently on the menu) then after 8 hours or so is goes super loose. frustrating.

Exactly. As soon as you tweak one thing it's like whack a mole... but that makes it interesting as well. The ideal brix level is very unique. I've made a few things at 13ish that tatsesd great and then others at 9 that were too sweet. All comes down to preference I guess and the style of drink. But I did make some Hawaiian Punch that was non-alc at 4.5 and it was wild how much less cold it was than the ones at 10-15 brix I'm sure someone smarter than I am can figure out a spreadsheet where you can plug in brix and abv and it tells you how much water to add

Not sure about the artificial sugar + ABV. In addition to sugar working as an antifreeze, it also changes the texture of the drink. More sugar = smaller ice crystals. There are artificial sweeteners that can aid in slushing, but I haven’t tried them. So part of the slushie experience is those very small ice crystals, and if that’s not the goal for someone or if you’re okay with larger ice crystals that would come from high ABV low sugar, it makes more sense to use a blender. You could add wine but you’d still need sugar to get the right texture.

When you’re making a cocktail in the machine you’re working at or near max levels. Problem is too much sugar, alcohol or both lowers the freezing point below the machines capability. But this goes for other machines as well.

Seeing as the way this works is by that plastic blade scraping the ice crystals off of the supercooled metal cylinder, besides the convenient pourspout, is there any real functional difference between the slushy machine and any old ice cream maker?

A couple very important differences. First, these keeps a consistent temperature. An ice cream maker with a frozen bowl or ice+salt drops in temp immediately and never stops dropping temp. You won’t be able to keep the drink at a specific temperature. Second, this machine at least has temperature control based on type of drink. Colder for cocktails, less cold for fruit juices.

I have heard that some zero calorie sweeteners might make a slushy. On the Ninja website I saw a video that said Allulose could work. someone should try that. Also has anyone tried a stevia based pop like whole food markets 365 Zero Calorie Cola, or Zevia. Never heard anyone say that would work but since it's natural I'm still curious.

All depends on if the sweetener lowers freezing points. Some of it is textural, but it’s also about temperature when the liquid will freeze. Anything can turn into a slushy, but most machines would turn water into a block of ice. Some machines may have smart features, but if not it would potentially break the machine.

It’s probably not going to work 1:1 in a machine. Would have to run the numbers but I assume adjustments would need to be made.

I can’t wait until they’re back in stock. It’ll take time to get a good set of “go to” recipes. - some kind of coffee drink with Kahlua - vodka lemonade - mango margarita (maybe tweak your recipe with mango juice instead of lime juice?) - rum and coke - maybe 50/50 mix of regular and Diet Coke? The list goes on….

I'm sure in time there will be more recipes available, how many of those recipes will be quality ones is the bug qiestion. Diet sodas won't slush in these machines but they may when you add alcohol. You need something (sugar and or alcohol) to lower the freezing point. Interested to see if that works by just leaning on the ABV instead of sugar

a cup is around 237ml, a tablespoon around 15 and a teaspoon around 5

I definitely didn’t plan on buying this if I have to do math and resort to spreadsheets! It should’ve been just as it appears to be “a slushi of whatever liquid you put into it and it works” it brags on the fact that you don’t need ice so why would I want to add water! Hints the same as ice””” I’m not interested anymore! It’s just too much to deal with! Might as well stick to a blender!

Well I mean no one is making you use a spreadsheet. You can simply follow recipes you find online, in their book, or buy premade mixes with instructions. The spreadsheet is a simple way to build cocktails for people that want to make their own recipes and understand ABV and Brix. It’s not mandatory.

That is used for baking. You can use guar for great texture.
