That was indeed marvalous !!! In the summer time when raw mangoes are avaible we add a bit of raw mangoes in the Vaghar it gives it a lovely tangy taste. For wedding feasts and other celebtations the Bharuchi Akuri is prepared (from Bharuch) it doesnot have turmeric only green chillies garlic and dried fruits like rasins and cashewnut and made in pure ghee...its heavenly.

Looks yummm... U can add 1-2 spoons of fresh cream or cold milk while u beat the eggs before u add to the pan... it will give a super rich and creamy texture..👍🏻

I have never eaten this with rice, but if you try this combination, do let me know, Consistency wise, you could keep it as in the recipe, for is moist enough to moisten the rice. Kind like a thick gassi, if you get what i mean. 🙂

Is it mandated that the eggs should not be well done!! Am a bit apprehensive of eggs not cooked properly leading to gastric problems...

If the eggs are fresh, it shouldn't be an issue. And the eggs are cooked, not raw. But if you'd like, you can cook well done. Cheers!

I usually cook mine well done, then add little milk to soften it. Eggs upset my stomach unless they’re double cooked.

This is similar to but not exactly egg bhurji. BTW he is no chef he has not created or named this dish. It is a very old(almost 100 yrs if not more) dish of the Parsi community. Please do some research before opening your mouth and showing your ignorance with belligerence of being right when you are not.
