Yep, you can! I've done it. Make a regular ganache with milk or dark chocolate and whip it in the same way.

I'm no expert, but the concept seems pretty straight-forward. Whats going to make it airy and fluffy is the cream, so my guess is, as long as you have cream, and you don't burn the chocolate, it should work.

The frosting has a light airy taste to it once it's been beaten. Not too sweet at all, but just make sure to use good quality white chocolate. It really makes the difference.

Love all of your vids Elise but this recipe didn't work for me! As soon as I began to whip the cooled mixture in my Breville mixer with the whisk attachment the mixture split and tastes really grainy. Is there a fix for this or is it ruined? Ill keep it in the fridge for now...

This depends on the wattage of your microwave and the quality of the chocolate. If it is on maximum wattage like mine, I do 30 second intervals with good quality chocolate. You could always lower the wattage but then you would have to remember to change it back. Melting chocolate is quite safe and is much quicker than the double boiler method which also runs the risk of running out of water when you are not paying attention... :S
