Vanda and Silvana share their recipe for hand rolled spaghetti called mouse tail gnocchi locally in Lazio. Fun pasta names pop up all over Italy and this shape is also called 'little worms' in Umbria.
This is an easy, fast shape to make, needed no previous experience or tools; just get rolling!
For the pasta: 1 kilo '0' or plain, all purpose flour, 500ml water (50% hydration in other words, you can half the quantities easily). For the sauce: 1/2 onion, 1/2 carrot, 2 celery sticks, 500ml passata, salt, basil leaves. To serve: grated pecorino cheese, which makes it vegetarian; omit to keep the dish vegan.
