Vanda and Silvana share their recipe for hand rolled spaghetti called mouse tail gnocchi locally in Lazio. Fun pasta names pop up all over Italy and this shape is also called 'little worms' in Umbria.
This is an easy, fast shape to make, needed no previous experience or tools; just get rolling!
For the pasta: 1 kilo '0' or plain, all purpose flour, 500ml water (50% hydration in other words, you can half the quantities easily). For the sauce: 1/2 onion, 1/2 carrot, 2 celery sticks, 500ml passata, salt, basil leaves. To serve: grated pecorino cheese, which makes it vegetarian; omit to keep the dish vegan.

Oh…Silvana and Vanda brought me to tears. They each, in their own way, reminded me of my Grandma, who I lost 65+ years ago. They even look like my memory of her. And, she would wrap her tea towel around her forehead to help with headaches. That’s a memory that has long been forgotten, until today. God bless both Grannies for giving me the gift of wonderful memories today! And the dish of pasta made my mouth water while my eyes were watering!!😅😅 TFS, Sharon🤗♥️🍝🤗♥️🍝

Women like these two gems make me so proud to be of Italian decent. I love cooking from scratch, make my own pasta, always trying to learn different shapes, and still trying to make good sauces which I must say is challenging for me. I haven’t figured out why yet. My newest tomato sauce is Mutti, and hard to fine here, but when I do, I try to buy as much as I can afford. What a great tomato 🍅 sauce. Not sweet, not acid, just right!!

Buona!!!!! One of many vivid memories from my childhood in Italy is when the village women in Basilicata would carry heavy loads of produce or liquids on their heads like that. I used to practice it with a tea towel all of the time. Always love your nonna's and their stories.

I cooked this for 2 of us for lunch. I reduced the measurements to make a smaller amount of pasta.. It was delicious, fed 2 of us for £1.50. (Shop bought pasatta of course.) Defo making this again.

Some fun-looking pasta! Also a demonstration of how knowledge vanishes very rapidly with innovation - I can /guess/ at how to fold a teatowel so evenly someone could balance an ewer on their head with it, but I don't know that I could do it in practice. I hope I never need to, of course, but the way skills trickle away as life gets physically easier is humbling.

In Tuscany this hand made shape is called pici and is traditional in Siena with game meat sauces, especially ragù di cinghiale (wild boar) - which is one of my absolute favourites. 😀

I always enjoy watching these, but especially when the recipe is plant-based. The sauce is very much like what I make when I make red sauce from scratch, except that I start with a little more liquid and let it simmer for up to 2 hours, then use an immersion blender to combine it all. In my 63 years on this planet so far, I have only made my own fresh pasta once, which I used to make ravioli. I live in an apartment with a very tiny kitchen, which makes it difficult, but I really want to do that again.

Le belle nonne italiane, una vita a LAVORARE per la famiglia, i figli, il marito e da vecchie anche per i nipoti...! La conca sulla testa per il trasporto dell'acqua mi fa venite in mente mia nonna che usava lo stesso sistema ed usava lo spesso sistema per fare la pasta ed il sugo "finto" perchè senza carne...Sono orgoglioso di essere un italiano (abruzzese e marsicano) e che in Italia esistano ancore queste belle persone esempio per tutti....

I'm curious if all the pasta water was discarded after cooking since water was hard work to get.nwould it have been reused ever?

that's a good question Judith. I think that in the days of no running water, pasta was not a daily dish? I once filmed a signora who explained pasta water was used to rinse the dishes. Also notice that none of our ladies use the giant saucepans for boiling pasta specified by chefs! best wishes, Vicky
