How to cook fresh bamboo shoots Nagaland style|traditional|making khar(wood ash/lye) n cooking with it|Northeast India
khar is made by burning the bark of amla/ gooseberry plant or banana peel or stem.It can be called natural soda as it is highly alkaline in nature.
This is time we get fresh harvested bamboo shoots,some keeps it for fermentation ..some make pickle n some simply cooks fresh....today I have made 3 different type of dish using bamboo shoot out of which,one I have made using khar.Bamboo shoot is acidic so the khar lower the acidity ..giving a unique taste to the dish...any one who loves bamboo shoot will definitely love the dish....enjoy the video

Wood ash?? Please tell which 'woods' ash ? We would like to know....we just cant go with anything some are poisonous 🤨

Bdw its not scezuan pepper. This is mezenga seeds right. Both are close relatives. Scezuan pepper grows in frost prone areas. It's called yerma in tibetan. There is difference in taste too

We make the same thing but we not directly added ash so we purify it's with water and called it piila and I love Sichuan pepper and chutney... love from Arunachal Pradesh

Try boiling fresh bamboo shoot with a herb call Paracress in English, scientific name is Acmella oleracea. We call marchang in our tribe.
