Making a Quilted Coat (TamarackJacket) and adding a Collar & Hood

I am busy working on my Tamarack Jacket for the Free Spirit Coat Story. I will show you how I added the optional collar and hood to my quilted coat and finished the seam to make it reversible

When you put the binding on the length of the sleeve, do you have to finish it by hand? and do you use one long piece for the seam from wrist to jacket hem? I make these for toddlers and I'm catching myself in a mess. thanks
