Also I would love to see a follow up on the potatoes, like what did you do with them after they started growing to prevent green potatoes . I planted some but I don’t know what to do with them now that they have grown almost as big as my tomato plants .

I do a year of pesto too. I plant 6 sweet basil in buckets and get them 3 feet tall and 2 feet wide by watering everyday and topping them to keep growing. Makes 20 pints. Neighbors and inlaws get pampered!

I’ve just found out this year you’re not supposed to use the green tops of leeks 😅 I’ve always seen my dad use them and always have used them too.

I have found that I have to cut the leek top pretty finely (or puree) and cook them till they are tender. They add a delightful onion flavor without the harsh bite. You're not supposed to use them in cooking cause they are so "tough".

You mentioned the pesto being good on eggs (then made a quiche! 😅) and it made me think of a small mom-and-pop restaurant near me that makes "green eggs and ham" which is an omelet with ham, but they beat pesto into the eggs before they make the omelet. It's SO good!

Personally, it feels like we're hanging out, so I enjoy the DITL "tag-along's" as much as any other video you put up. This looks fantastic and what a nice thing to have ready to go. One thing I do is freeze my pesto thicker, more like a paste. That way i can use it as a spread for sandwiches or wraps. If I want to use for pasta, I add more oil, broth or pasta water to thin. I use walnuts too . Like the taste and the price. :)

I love to use carrot tops in pesto as well. Another part of the plant most people waste. If you forage, lambs quarters make good pesto too. Lamb's quarter tends to take over many gardens so why not eat it?

I would love to see you just being you. Meaning I think it's great to see what you have going on around you. @@AcreHomestead I just found your channel today. Subscribed. Several years ago I was at the gardeners market and they were selling garlic scapes 3/1.oo. I had been throwing these out. There was a Chinese woman buy so I asked her how to use them(she was horrified when she found out I was throwing them away). She said she used them in stir fries,then I found a recipe in Mother Earth News for pesto similar to yours. I do everything by sight and taste

No way. 😆 And that's totally how I cook--recipes are meant to be modified to an individual's tastes, budget, and ingredients on hand. Yes, I love the multitasking! If I’m doing one thing I might as well be doing as many things as I can get done, while I can. I like to be as efficient as I can. The onion top & walnut pesto is ingenious! I’m not crazy about basil & pine nuts.(I can eat it, but I don’t love it.) But I love onion tops & walnuts! I think I’ll try some of that this yr! Just made this, with a few substitutions, due to what I had on hand. I had raw cashews, which I pan roasted and Gruyère, from Thanksgiving recipe, and added a cup of basil, because I didn’t have enough onion tops. It was fantastic, thanks for the inspiration, again!

I love watching how you handle your daily life. It's real and it's what I need because I go crazy trying to juggle it all. I especially love your freezer meal prepping. I've tried before, but it was exhausting for me...but the way you do it and talk us through is definitely doable for me. I will be starting more of this, especially the marinated freezer chickens! Thank you so much and please continue sharing with us. You're an inspiration.

Hey there, thank you for letting us take a look in your world and for sharing all those recipes. Also, if you didn't know: you can store most pestos without canning in your pantry if you have enough oil and salt in it. Also the top should be covered with oil, so just add some oil, after filling it into the jars and it should be finde. I do that with wild garlic :) Sorry if I made any mistakes, I'm from Germany :)

I never knew you could just put pesto on the shelf with a covering of oil. Do you have a recipe by chance? No mistakes that I see. 💖 from Midwest USA
