I can only eat 14 foods, so I made an 8 course tasting menu meal for my family to try using only the 14 foods I can eat.

For appetizers, if you have the possibility of having raw fish, you could make a ceviche or a crudo by marinating the fish in lime juice olive oil and salt and I would serve it in really thin slices with thin slices of watermelon and lime zest. You could also make some varieties of fish cakes, I was thinking even little fish nuggets made by blending fish with a chia egg as a binder and salt and then having them coated in blended water lily seeds as a breadcrumb and fried in the most refined olive oil possible for a neutral taste (if the process of refining still makes it allergy free ofc), serve that with charred zucchini slices and an emulsion of olive oil, cucumber and lime juice seasonned with salt. Another variety could be made by steaming the fish, flaking it, adding a chia egg (maybe blended chia so that it doesn't disturb the texture), forming it into patties and searing it with plenty of olive oil, maybe serve that with green beans, either crispy as you make them or in a salad form to add brightness to the dish with a lime dressing. I have seen comments suggesting roast turkey and I have to agree that you have to try it and perhaps glaze it with a raspberry couli or some confied figs. Now this next thing I am not sure of however, I think there is so much to explore with the water lily seeds as an ingredient. Last time when you made your cake they weren't fully blended and I wonder how they would act as a fine flour, perhaps with a chia egg, some glucose powder to make a batter and make some crepes or pancakes, some chia and water lily seeds (perhaps also implement some bigger pieces of them in) crakers. I feel like I have a never ending supply of ideas and I would love to try them but I haven't been able to find water lily seeds at all in my area...

For deserts, I've seen Watermelon Sorbet with Olive Oil & Flaky Salt, and poached pears with raspberry sauce. I've also seen turkey roasted with a fig paste glaze (made with lime juice, olive oil, and salt) and another with raspberry puree. I've even seen a restaurants' recipe for fish broiled with figs, oil and lime juice (although I think it would be much better adding an aromatic, spice, or herb.) You could make a version of Baba ghanoush: prick zucchini and roast until very soft. Scoop out the pulp and blend with lemon juice, olive oil and salt. Try it as a dip for your crispy green beans. If you have the equipment, you can vacuum seal watermelon and it becomes compressed into a semi-chewie candy.

The olive oil in the sorbet is a great idea! I don't know how that works with water and oil mixing though. Those are all amazing ideas too. Thank you!

I'm not sure if you've done something like this before, but you can make pear sauce like apple sauce, and I think it tastes pretty good. We use lemons to add flavor to ours, but you could probably use limes, and instead of using sugar to sweeten, you could use glucose powder. Just a thought!

Suggestions that maybe you haven't tried: making broth from turkey bones, blending dates with olive oil+lime+salt to make a dressing (would be nice on vegetables and also maybe to add like a glaze to the fish while cooking), roasted grapes are yum and air fried thinly sliced zucchini (crispy) 😄

@@jennaxhealth No prob! Does fermented stuff work for you? If yes, preserved limes might be a fun thing to try! I’ve only had preserved lemons which are great. You could also make pickles by fermenting cucumbers. I would guess histamines probably increase by fermenting, but might be worth a try!

You could also try and make an emulsified dressing. Just put 3 parts olive oil and one part lime juice in a blender, and mix. I was also wondering if you have made a soup before, like a simple zucchini soup or a watermelon or cucumber gazpacho. If not, maybe also something you can try 😋.

One thing I think you can fix up is the sorbet. Mix the frozen watermelon, add the watermelon juice, but then add lime juice! It’s a real game changer. Another thing is when you are done making the zucchini noodles, put them in a pan to crisp it up with salt. Put the zucchini noodles on the plate with whatever you like. Another suggestion is making the Lilly seed pulp into a paste (like I’ve seen in your shorts) and crisp it up. It should look like a pancake. Make a watermelon or pear syrup from the fruit plus the glucose sweetener. Put the syrup on the Lilly seed pancakes and add some fresh fruit on top! Now, that sounds delicious. I might have to try that myself.

I may have a fun suggestion! You can add the turkey raw in the zucchini boats, and put them in the air fryer like that. You can then also add stuff to the turkey that you can eat, including whatever you scraped out of the zucchini. Brush with a bit of oil and leave it in the air fryer until the meat is cooked properly. Then you can top it with crushed water lily seeds for a bit of texture.

rice crackers chop waterlily seeds into slightly smaller pieces, then mix them with a little bit of your homemade date caramel, and optionally watermelon juice, it’s a traditional ingredient in thai rice crackers. maybe also a little salt to enhance the flavor. form them into thin circles, then air fry until crispy :) i haven’t tried this out so i don’t know if it works, but i think it would taste good

Maybe you could try and grind up the waterlily seeds to some kind of powder like thing, season generously with salt and lime zest, coat some fish in olive oil, dunk it in the seed mixture, and then either pan sear in oil or either air fry. You could maybe try it with green beans too. I don’t know how well this would actually work because I have never used waterlily seeds before, but I thought it would be a nice idea.

Have you ever tried making a fruit salad now that you have a few fruits you can eat? Use lime juice and a bit of flglucose powder as the dressing. If you let it marinate a while, the juices from the different fruit will mix and coat everything and it's supper yummy. Also, have you ever tried making grape juice? It's one of my favourite juices.

@jennaxhealth Күн бұрын
No, I haven't. I wonder if it'd work
@hannahk1306
@hannahk1306 Күн бұрын
You'd need an emulsifier to make it work.Traditional mayo is made from: A neutral oil (e.g. sunflower) - olive oil isn't usually recommended because it has a strong flavour, but it would have the same effect. Eggs (the emulsifier) - popular alternatives used in egg free mayo recipes are aquafaba (chickpea liquid), milk or milk alternatives like soya milk. This is probably the hardest part to replace, but I'm wondering if you could do something with chia seeds (would have to somehow get rid of the lumps) or if any of your other foods could act as an emulsifier? An acid, usually vinegar or lemon juice - you could use lime juice (I've used it before and it works well). Mustard - I think this helps with the emulsification, as well as adding flavour, but you might just have to leave this out and just experiment with making an emulsifier from your available foods. Hopefully that's helpful - I think you might be able to make mayonnaise, but it's going to take some experimentation and isn't as simple as just whipping oil unfortunately.

@hannahk1306 You mentioned milk alternatives as an emulsion alternative. I wonder if her water Lilly milk would work?
@hannahk1306
@hannahk1306 Күн бұрын
@@akpopfamily907 It's possible, if it's relatively thick. I guess the easiest way to test it is to put some oil and water in a glass, then add some water lily milk (or whatever she's testing), then stir and leave for a while to see if it separates. Some other things that might be useful: - salt seems to help keep emulsions stable. - pears are high in pectin (usually used for thickening jams, but may work for mayo) or even just buying pectin, so long as it doesn't cause a reaction. - xanthum gum is often used in shop bought mayos (also used as a gluten replacement) and is relatively easy to buy, again if she doesn't react to it. - it seems to be the milk proteins in milk and the soy lecithin from soy beans in soya milk that work as emulsifiers, so I think probably only some milk alternatives will work. I think it may take a bit of experimentation to find something that works well as an emulsifier and is the right consistency for mayo, but hopefully she can find something suitable.

Olive oil will whip. Freeze it. Whip it with lime juice to spread on things. Can make a form of whipped cream if you have some sort of cream. Mayo needs a oil, a acid (vinegar or lime) and probably a starch.
