Pretty good video, your editing and fit and finish are very nice. As the heat treatment of AEB-L is Definitely not beginner friendly. I'm glad you stated it was a good beginner "stainless steel". Have you done any hardness testing or edge retention testing on your blade? I have a feeling you didn't hit your intended as-quenched hardness throwing off your after temper RC value. Heat treating outdoors drastically changes the visual color of the heated steel making it difficult to ensure you were at 1975°. Forges are very difficult to HT stainless in as keeping the temp constant throughout the soaking process is almost impossible without a needle valve gas adjuster and a pyrometer. An austenitizing temperature of 1975° is used if you are also doing a cryogenic treatment with liquid nitrogen. With your austenitizing temperature so high, and no cryo treatment your blade would probably quench around 60RC. I couldn't find any tempering data with an as-quenched hardness that low but I would estimate that you will reduce your RC value by 3 to 4 points with a 350° tempering cycle. The other issue that could be a concern is your austenitizing temperature and soak time. Without a long enough soak time at that temperature you could easily have a large amount of retained austenite within the steel. If I had to venture an educated guess I would say your blade is 56-57 RC. Anyway, that's my 2 cents.

That's some useful 2 cents there my friend and right about where I think I am as well. I did take readings with my pyrometer that had me right around 1975F which only needed a 5 min soak compared to a 30 min soak at 1950F. Without cryo though, like you said I miss out on a few HRC points. Happy with the edge it took and it's currently being tested in the kitchen by a friend to see how it holds up. I appreciate your insights! It is quite literally my first SS chef knife and all the tips I've been getting should help make the next one even better. Happy holidays!

found you recently and love your vids, but AEB-l being a good steel because of easy heat treatment?? You might wanna look again at the austenising temp, the preheat cycle and the fact it need to be cryogenically frozen... EDIT: in fairness, its an easy steel to get to an okay hardness, but if you really wanna push it, then its as hard as something like m390

Hey thanks for watching. I did say good "beginner" stainless steel and I do follow the manufacturer's reccomended temps for preheating, austenitizing and tempering. Cryo is definitely ideal for max hardness but I wouldn't call it necessary. I like to use steels that beginners can easily work with and AEB-L is the only stainless steel I found that you can harden to a useable HRC without an oven, steel foil, aluminum plates, air compressor, LN2, etc. Agreed?

Thanks! 1975 F for 5 mins then quenched in oil. Tempered at about 375 for 2 two-hour cycles. It's not the best heat treatment for AEB-L but it worked!
