I don't know about you, but I love looking through recipe books. Especially ones with pretty pictures. Now, I'm often skeptical and think, can it really taste as good as it looks. To be honest, I have flipped over the recipe I am making today many times. It looked pretty, but too light to be satisfying maybe? Or not enough flavor to not need a lot of doctoring up. Quite often, I'm disappointed with canning recipes and didn't want to go through the effort of chopping up a bunch of my precious squash from my garden if it wasn't going to work.
I even did a search to see if there were any other videos out there that made this recipe, and I couldn't find any. As a leap of faith, I decided to make it. And, I tell you, it is probably one of the most delicious soups I have canned.
So, if you were like me, skeptical of this recipe and skipped over it in your canning book. Go get your book and earmark this page to make this soup.

Hi Renee, I live in Southern California. I am up high in the hills in the middle of a forest but on a lower part of the mountain 2,618 feet above sea level. I do grow lemon grass in my garden inside a raised bed because it will grow very quickly and it spreads into a huge bush and in fact ours grows over five feet tall but its been a blessing for some of my more sensitive plants that I’ve planted under and around it because they can only handle partially sun. It just does such a great job protecting them. Lemon grass is such a beautiful bush and when you walk by you can smell this beautiful lemon aroma in the air. Here in my climate it’s very easy to grow and I hardly need to give it any care except for the winter months. It’s sensitive to frost and it does snow where I live. I personally use a winter garden cover to keep my plants from dying over our winter months… P.S. In my garden, I have never grown Thai chilies but I do grow many other varieties so, I did a little research it said any spicy chili will work even mild chiles for those who cannot handle spicy heat. I used Diablo chilies in my soup came out beautifully and delicious. Thank you for sharing

Hi Renee, luv watching u in the kitchen. I grew Lemon Grass this year. It grows like crazy and seems as soon as u trim a bunch off, u have to trim again. My plant is still young so im sure by next summer i will have some nice stalks. I think u should grow it. Great for tea also. I cant remember if Becky grows it, she grows so much. Luv her. Yes, grow the Lemon Grass.

Please go thrifting alone and take us through your thoughts and finds. I really enjoy Becky and her channel, and will always be a fan for her upbeat personality and organization, but simultaneously I enjoy watching you for your calmness and your smooth voice and the much slower pace of your Endeavours!

I really enjoy your presentation and how you give the instructions, very informative. My mom canned all of my childhood as well as planting, tending and harvesting our produce. We never went to the grocery store. My dad raised and butchered our beef,pork and chicken. I grew up in West Virginia and I had a wonderful childhood. It bled over into my adult life. I don't can as it's just me and I don't eat much. I can go a couple days and not think about eating. My dad was the same way. But I love watching the vlogs because it brings back memories that is such a blessing for me. I really enjoy your channel. Hope you will be doing some crafting too.

I've never grown lemongrass, but if you go to your local asain market you will find it cheaper that the grocery store. They always have great deals on produce too!

Hello! I followed the recipe in the book, but added about one cup of chicken for each quart jar. Hope that helps?

If you find it put some kaffir lime leaves in with the lemongrass, also try shallots instead. It really makes it have an authentic Thai flavour.
