I’ve always loved this scene to death because of how much it reminds me of hanging out with my dad and uncle when I was a kid. They were big food guys and we’d spend a lot of time making food and going out to restaurants. God, I miss them.

It's all passion, man. People do work like this because they love it. That's why teachers make what they make and still teach. That's why folks serve in the military. etc etc etc. There are people on this planet who thrive under pressure, respond well to harsh environmets, and they live for stuff like this. Chef made me fall in love with food service. It's a little Disney, at times, but it's also a great representation of a creative and talented person refusing to bow out because of pressure and criticism. I think that's what all of us who work because we love it are being fueled by.

If you've never had a cubano like this, you need a cubano like this. Recipe tin eats has a recipe version of this that is bomb as fuck and I look back at this scene to tell everyone what they are missing by not having this sandwich. "Ham and pickle and yellow mustard and swiss cheese" turns them off, but they are missing the critical ingredient. Love. This sandwich is made with love. And mojo pork, but we don't tell them that.

The one thing I miss about growing up in Florida are the all the places to get a good cuban sandwich. IIRC, the authentic sandwich isn't pressed. But as time went on, it went through many variations which is why you can eat a cubano in different ways. My favorite: Pressed cubano with mayo, a little extra mustard with lettuce and tomato. I haven't had a real one in years...

It's a thankless job, but man, seeing the satisfaction on peoples faces when they eat your food is reward enough. I'm not a certified Chef, but I've been in the business for over 18 years, and have learned so much from qualified Chefs. As soon as I can afford a retirement I'd like to own my own restaurant. I could say I'm a chef, but I feel that would be disrespectful to actual certified chefs.
