Two days were so worth the wait. I thought you were overreacting about the pork, until I tried it. I may have yelled at my husband, then he tried it and he freaked out too. We made homemade pan cubano, not as fluffy as the local Cuban joint, but it tasted amazing.

Miguel Lantigua Um pan sobao is not Cuban bread, pan sobao is sweet and generally attributed as being Puerto Rican , Cuban bread is not sweet and is a lot different in consistency.

TheSensation92 Look around for any ethnic stores like Bravo or any Latin bakeries, anywhere where there are latins there are latins stores, anywhere with Latin stores there will be a hot case with Cuban bread in it. Alternatively some stores like Walmart and Winn-Dixie also sell it, just not as good. Depends where you live.

I was very confused about the pork before I remembered my mom uses leftover pernil to make her cubanos and this is what babish was making. Cubanos are the absolute best, and I highly recommend making some pork shoulder/pernil for your family or a party on an occassion such as Christmas so you can have leftover pernil for Cubanos! Family tradition of mine that I'll likely pass on to my kids

Maybe they just get used to eating soap. As a kid I would refuse to eat celery, because insisted that who ever washed it didn't remove all the soap. My mom kept telling me that no one used soap on it, and let me watch her rinse it again, but it still tasted like soap. Cooked celery is OK; the compound likely breaks down with heat.

12 hours of waiting, the work is minimal. I'm trying it out and the brine took all of 10 minutes mostly because I don't have a garlic crusher. Then it's just waiting, make a quick marinade, baste, and then more waiting. Total work is closer to like 30 minutes. Just lots of waiting.

Today will be my fourth time doing this recipe because it’s probably my favorite Babish recipe, but I’m pretty sure that it is physically impossible to not drop a citrus while zesting when you have to zest that many. Heaven forbid you added the olive oil first and you end up dropping the already slippery fruits into a bowl of oil. 😂

We Cubans do it differently: (just for the pork though, we don't have Cuban sandwiches in Cuba, Medianoche yes, cubanos no) Mojo: Sour Orange, Cumin, Salt, GARLIC (lots). Pork: Stab the devil out of it, and get the mojo in the crevices. Leave overnight. Start cooking at around noon and enjoy your pork by 9pm or something like that :)

if you want to get rid of a bad smell on your hands, just use coffee grounds. Mix them with liquid soap and just wash your hands for at least 30 sec. coffee grounds neutralize smells. lots of love from Bavaria, Germany

Fine Job ! I know it's not "standard" but when you do any panini sammich try coating the bread with a combo of butter...olive oil...oregano...grated parmesan. It adds an insane flavor profile.

Hunter Holley nope not just you. The scene from Chef features Santana’s “Evil Ways”, which I assume was copyright claimed, hence why Babish muted the audio. EDIT: Checked the Spanish version, and no Santana plays. So I’m probably wrong, but a copyright claim from the Chef video is probably the reason.

I just finished making this and the results were great! The taste of the pork is strong and bitter at first, but then it melts away into savory fatty goodness and that's BEFORE you use it to make the sandwich!
