You want 70 proof alcohol for the very best results. It's the water that extracts the vanilla, the alcohol is the preservative......

If you didn't lower the proof of that everclear it will not work. You need 70 to 100 proof no higher and once you get any higher than a 100 proof your beans just get hard and the extract will not come out of the beans.

Use a vacuum sealer to remove the air in the jar. Open and seal them over the course of 8 weeks.

I learned after using 151 rum was not a good choice in alcohol for me. It took a couple years for that alcohol smell to tone down. And a couple pounds of beans too. It does make bake goods taste great. I didn't do individual bottles either.

I googled 151 rum and it said it has almost double the alcohol content of regular rum. I wonder if that’s why?

What difference does the higher percentage alcohol make? I've been making mine for years with straight organic vodka without Everclear. I'm interested in how this changes the batch. Thanks

You certainly can use straight vodka. It’s usually around 80 proof. It’s suppose to produce a lighter extract. I’ve only done it using 100% proof since I learned to do it that way.

The higher the alcohol level(proof), The more likely the vanilla beans will freeze. Not give off its flavors. Keeping it at 70-80 proof has been found to be more ideal. Changing times produces more knowledge.

I don't make my own but I buy vanilla extract with bourbon whenever I can find it. Also my grandmother who was a wonderful baker told me to double the amount of vanilla that a recipe calls for and I've always done that! Works great!!

I made mine a year ago using 80 proof vodka and grade b Madagascar vanilla beans and used their recipe. I made mine 9/22/2022 and it’s now 12/26/2023. It smells and tastes to strong of alcohol. How do I fix this? I’m so disappointed.

You absolutely do NOT need to increase the ABV to 100 proof. 70-80 is best.

All of that seems really unnecessary. You can use any alcohol as long as it is 80 proof. The best and most popular choices are vodka, bourbon, brandy, or rum. Vodka is the most versatile because it has a neutral flavor. You also don’t need to use the fat, thick (grade A) beans. The less expensive, brittle ones (also known as grade B vanilla beans) work just as well.

You don't need to use grade A but some speculate that it matures faster than Grade B. I don't know for a fact I'm making my first batch but for me with the price difference I can wait longer.
