@@thekrispypub14 kangaroo for human consumption is mostly rump steak and available in mince or steak form. it's extremely lean, and very gamey has a decent amount of extra iron than beef. Sausages and burgers are the main form you get from mince, while the steaks are best butterflied and flash fried because it is extremely easy to overcook and if you do that it becomes leather tough. Thin cut for stir fry is the other main way people use it.

I think if you would use salmon as a burger, don't grind it! Just prepare it like a steak, leave the skin on and let that skin get crispy. Start in (olive) oil skin down, add a nice bit of butter. A thick filet might be a bit too much but a tail end would do well I think.

My mom used to make Buffalo meat burgers for me as a more lean option to regular burger meat as a way for me to enjoy a burger in a more healthy way. I loved those burgers. It was a leaner meat that somehow didn't sacrifice flavor at all. I miss those burgers.
