Making Flavorful Chicken Tinola
500g chicken
2-4 tbsp fish sauce
1 tsp freshly crush black peppercorns
2 tsp salt
1 small onion (sliced)
3 cloves garlic (crushed)
ginger (sliced)
sayote (chopped)
3-4 stalks lemongrass (pounded)
bunch of greens (malunggay leaves or spinach)
1. Sauté the garlic and onions for about 2 minutes over medium. Add the ginger and sauté another 2 minutes.
2. Add the chicken and stir for about 2 minutes.
3. Add the lemongrass, fish sauce, peppercorns, and salt. Mix and cook for about 2 minutes.
4. Add the sayote and chilis. Mix for another minute.
5. Add boiling water and stir well. Taste the broth and adjust as needed.
6. Simmer for about 20 minutes or until cooked. Then add the greens.
