Making Flavorful Pinakbet
1/2 squash/kalabasa (cubed)
1-2 eggplant (cubed)
1/2 ampalaya (sliced)
1 bunch okra (sliced)
1 bunch string beans
2 tomatoes (sliced)
1 small onion (sliced)
2 cloves garlic (minced)
1 cup shrimps
2 tbsp oyster sauce
2 tbsp bagoong
1/2 tbsp sugar
salt and pepper
1. Sauté the shrimp until almost cooked, seasoning with salt. Set aside.
2. Stir-fry the eggplant for about a minute, seasoning with salt. Use only a bit of oil, as the eggplant will absorb it. Set aside.
3. Stir-fry the string beans and okra for about a minute, seasoning with a pinch of salt. Set aside.
4. Sauté the onions and garlic over medium heat until fragrant, then add the tomatoes and continue to cook for about a minute. Add the squash and stir-fry for about another minute.
5. Add 1 cup of water and allow to simmer for about ten minutes to soften the squash, but remaining firm.
6. Return the rest of the vegetables except the ampalaya, then mix well. Add the oyster sauce, bagoong, and sugar, and stir-fry for about a minute or two. Add the okra (don't mix to avoid the bitter flavor) then cover and let simmer over low to medium for about 5 minutes.
7. Add the shrimps then stir for another two minutes or until the shrimps become fully cooked.
8. If sauce is not thick enough, remove all ingredients except the sauce, turn up the heat, and allow the sauce to reduce to desired consistency. Removing the vegetable will prevent them from being overcooked.
