Josh is using an Instant Pot to cook his rice?! That's what I do too! I'd love to know how he uses it because I vaguely remember him saying that pressure cooking is the devil for cooking rice (I might be paraphrasing here) but that's what I do, cook the rice in the IP for 3 min on high pressure then let it naturally release the steam for 18 mins and it's perfectly cooked rice!

Josh, have you ever tried the bamboo steamer method of cooking rice? Probably takes about the same time as pressure cooker and definitely comes out better, and you’re able to look at it and control the cooking process way better than locking it in a pressure cooker. Here’s how to do it: 1. Line bamboo steamer with cheesecloth (this is just so the rice doesn’t fall through the holes) 2. Place your washed rice in boiling water for 3 minutes 3. Transfer rice to steamer and place over boiling water and steam for about 20 minutes You’ll have fluffy but sticky rice that is absolutely perfect for fried rice! Not too wet, not too dry. uncle roger approved👌🏻

fun fact: seeds don't actually have any capsaicin. the placental tissue of the pepper has the highest concentration of capsaicin, and this is usually where the seeds reside, but the seeds themselves don't have any capsaicin. so removing the seeds does nothing for adjusting the spice level.
