simply beautiful, as always! Sugarbean, may i ask what you do with all your leftover yolks? i use a lot of eggwhites making almond bread, macarons and meringues but there is only so much custard i can use, and pasta i want to make. I'd love some ore ideas. Lately, out of desperation, I have begun using yolks and water to dip schnitzels in but i have so may frozen yolks, some with a little sugar, others with some salt in my freezer....

I was wondering if these can get any stiffer? I once overbeat meringue and it became super dense and another time I overbeat this recipe and it turned out puffy and foamy, but I’ve tried these and at this stiffness they make this shape well but can’t hold icing tip shapes like stars

I love all your video's and wish I could master my macaron's, I just suck at it and I've tried so many times. Just a quick question, not sure if this was asked before but what do you do with all the yolks? Most recipes for cakes wants both yolk and white so I would really like to know what you do with them.

I make layered cake (Kueh Lapis) as it needs 12 egg yolks and only 6 egg whites. Just nice leaving me 6 egg whites for making meringues. Another option is to use the extra 6 egg whites in fried rice together with perhaps 1 more whole egg in the fried rice.

My swiss meringue cookies was very sticky after cooling down in room temp for 15 min. I have dried it completely but it will be stickier later. Can you help me plz? I live in tropical country with really high humidity

Me too.... Very high humidity and it becomes stickey after some times.. . Then i searched in google and it says its normal... And in another site i have read that put the merangue cookies in bag or something in u wanna store then put a silica gel bag... It will keep them dry for longer time...!!! Hope it helps!!
