Just a theory but I think you have 130 guests per day that come to the tavern, but only serve 76 of them due to the demand. The whole only having 2 waitresses thing doesn't help I imagine.

I don't see anything wrong with an outdoor pub, as long as there's adequate lighting and decoration plus rain cover. My father in law runs one (IRL) and it sports both indoor and outdoor areas for customers to enjoy. The kitchen is inside to protect from things like disease and other issues, but it's the middle ages - what did they know about plagues... 😉

well ... all the foundation words that led to the word "tavern" were words that specifically referred to a building, one in particular, _trabis_ referred to a building made from large wooden beams. In Medieval times the largest and most well built building was the town center and the town's inn, and became a place to gather for meals and drinks. It's highly likely that people ate and drank both inside and outside of the tavern, but without the building it's just a camp fire.

You can just fire your employees when you really can't satisfy them or they're just constantly being unhappy. It's more money-efficient that way. Also, I noticed you questioned the spelling of liter, which is in American? vocab, with the British one being litre. Much like tire and tyre.
