Making Mall Pretzels!

Hi guys! I'll be making soft pretzels that taste like the ones you get at the mall or airport! Here's the recipe.
1 cup milk
1 packet of active dry yeast (2+1/4 tsp)
3 tablespoons of light brown sugar
2 1/4 cups of flour
10 tablespoons of butter
1 teaspoon of fine salt
1/3 cup baking soda
3 cups water
Course salt (Can be replaced with more fine salt)
1/2 cup white sugar
1/4 cup brown sugar
2 tbsp cinnamon
Directions
Heat up the milk in a sauce pan to 110 degrees, add yeast, then sugar
While the yeast is fermenting, mix the cinnamon and sugar together
Add just one cup of flour to the yeast mixture, stir then add the butter, then salt, then remaining flour.
Knead for several minutes. Let dough rise in greased bowl.
Cut dough into strips then form into pretzel.
Heat up water, add Baking Soda.
Dip pretzels for 30 seconds then put on sheet tray.
Brush the egg on top of your pretzels.
