Let's make syrup! We have a VERY SMALL HOMESTEAD syrup operation. This year we tapped red maples, Walnut and Box elder trees. the final syrup boil down resulted in a very carmel tasting Syrup! I will now guard and use my small batch of delicious homemade syrup for only the specialist of occasions! Do you make syrup? if so what kind of trees have you tapped? Watching this process helps explain why organic “real” syrup is so expensive. I had no idea. Also didn’t realize how much had to be collected, to get the yield. Thank you!

Did you know that you can tap Walnut and Box Elder trees? I'm so glad we did because this Syrup taste incredible!

My husband is allergic to walnuts so I figured I had better not experiment. 🤷‍♀️

@@Maranatha_Homestead so is my grand daughter- tree nuts put her into anaphylactic shock! Walnuts are a superfood so creativity isn’t an option but I wonder about Hazelnuts… they grow in a bush so has your honey tried those? My lil gal does fine with that awful Nutella spread…

I skim the foam that forms on the outside of the pot when boiling and get the syrup to 217 and then let it sit for a day. All the minerals settle to the bottom. The next day I carefully pour out the syrup back into the pan and leave the bottom sludge in the jar. Then I combine all of the sludge into a slender tall glass and within an hour most of it has settled out and I pour the top syrup away and throw the remaining minerals. I don't filter at all and virtually nothing that settles to the bottom. I made 3 gallons this year. Brix was at 65-66.

My great uncle used to have a sugar bush. OMG, I remember maple sugar candy, and maple syrup on freshly fallen snow in a cup. !

Love that shirt. I did alot and I'm done. Finished weeks ago. Mine tastes buttery. I did one Red maple. It makes alot. I just boil until it foams up once and its done. Seems so much easier and I filter once coming in the house then once more before boiling and I use only a screen skimming utensil and I have no settlement. Its delicous and watching you I want some pancakes now. Mmmm good! 🥞🥞🥞👈today😍

Keep in mind different trees run at different times. Maples before birch for example. Just like not all tree leaves turn at once in the fall or not all leaves come out at once in the spring. Once the buds come its over.

It looks amazing but it does take a long time, so yeah you need lots of patience. So happy for you, nothing like homemade syrup. When it starts to rise up kind of like brown sugar and butter does it's done. I want pancakes or waffles now, hehe! Nice job Rachel.

I use no stick pans for the first final cook. I do a strain before like she does but because I use nonstick pans everything you would have to strain sticks to the nonstick pan. Crystal clear syrup every time.

Your thermometer shows a higher temperature than the actual liquid because it’s probably touching the bottom of the pan, which is much higher than the liquid. Try drilling a hole in a small cork so it won’t float and won’t touch the bottom.

Lol I completely understand the no paitents on those types of things. I make yogurt and milk takes 30 to 45 minutes to get to temp and forever to get down to add temp lol.

You can tell by the boil, too. When it starts trying to boil up/boil over, you know it's done. Yours wasn't quite to that point yet, although it was getting there! We ended up with about 5 pints :)

P.s. I finish the syrup, cool overnight to let it settle, filter cold, then heat it up to between 180-190*F and jar. The sugar sand only forms when the syrup is above about 195*F, so if you do it this way, your syrup should be clear.

We boiled sap this winter and found that coffee filters work pretty good, one batch was filtered 3x and is still clear 7 months later. The batch filtered 2x did a bit cloudy. How much sap did you boil down? We had 46 gallons and got 7 pints.

Looks good! I wonder if a maple tree in Southwest Florida would produce sap or if it’s only a cold weather thing? I’m going to look into it.

You have to have a long period of Freeze/Thaw time. That's why maple syrup is primarily produced up North.

Why do you cool down to 180F before bottling? I would think that would make filtering more difficult?

I finish until it starts frothing up and let it go for a couple minutes then take off heat. Never used a thermometer. Seems to work for the little bit I do.

Filtering is the hardest part!! I always get confused because the filtering cools the syrup too much while I’m bottling it. So, I start filtering it into the bottles at 215. But it’s still a very slow process and because all that time goes by, I worry about whether I bottled it hot enough or not. Ugh! I have the big thick wool filter but I read that it’s only good for a few years. Do you know anything about this? And that we need a pre filter AND the main filter NEXT to each other. I wasn’t doing that either I took the word “pre” literally and filtered it twice!! Once with the pre filter and a second time with the thick wool filter. 😱 There are so many different tutorials. I just don’t know what to do. I don’t want to stop making syrup. But the filtering part stinks. Please share anything you have learned about this since you made the vid. I’m on Cape Cod so our season is much shorter than yours but I could use the help if you have a minute to help. Thanks!!

I helped a friend with her batch & have 2 pints for myself. I noticed 2 very large square (clear) crystals in one jar. Interesting.

I have found a few also in my mom's collection that she got from my Great Aunt. I don't really want to try canning with them, but thought I'd use it for dry storage or syrup. It made me happy to see your find like mine 😊💕

40 or 50 gallons of sap, will make about 1 gallon of syrup.

We only have 1 tree on our property it is a maple but it’s very small.
