My mom used to have to heat the bottle if real Vermont Maple Syrup, in a pan of hot water, to turn it back into syrup, for my dad's pancakes....lol. It would crystallize, so easily in cool, dry places.

That's how they made sugar in the "olden days"! It is described in the book "Little House in the Big Woods" by Laura Ingalls Wilder. Always fascinated me reading about that and visualizing what was happening.

I feel that, My great uncle runs his own sugar shack just for himself and to give away to people. He would make maple candies while making the syrup by boiling it and dumping the hot maple syrup in the snow. The candies were like taffy, so good.

The device is Creaming machine - used in traditional confectioners all over the world. I made this candy with my grandmother using precious maple sent by Canadian relatives. Made specifically for holidays and celebrations... cornflour moulds.

What struck me aside from how delicious the maple syrup products looked, was the incredible cleanliness of the facilities used to process it! I guess that's part of the government cartel which strictly regulates the sales, production and marketing of maple syrup as though it were gold.
