it's actually one of the most delicious cheeses i've ever eaten. tried it in our restaurant for the first time :D it's so soft.. it falls apart easily if you are not gentle with it :'D the taste is really milky, it's delicious haha

the stretching (with the paddle) is done until the cheese is shiny and smooth. most people stop when it's just "elastic." not sure about "secret" but it's how it's done
