This Video may be 7 years old but it is the best one I've found. Me and the boyfriend bought 2 gallons of Muscadines last weekend to make jelly with. I wrote you a long heartfelt story of how your video was the very best I came across on making muscadine jelly. I also went on and on about how easy you made it look and how I have never canned a single thing in my life. Then my 18 month old hit the backpage button and it was all history lol. Love it! This morning armed with a bunch of wild muscadines I set out following your recipe. It went perfect! Easy peasy! I have now started my canning adventure and you helped me get off my rear and stop pondering it but actually doing it. My jelly came out fabulous! Very tasty and I now wonder what took me so long to get the nerve up. TYTYTY! I am now a humble subscriber.

Yummo! I haven't had any muscadine jelly in a long time. My Nannie used to make this and fig preserves. Last time I made grape jelly I had a reaction from the 'grape steam.' Looked like I had a horrible road rash on my hands, arms, neck and face. Wayne you are doing a great job. Mary you make a wonderful director. Thanks for sharing your videos.

I like the way I'm guessing your wife did commentary. She drove home the key points. I also like the calm gentle way in which you spoke. I also like the Camara angles. justpar2012 Cutting them in halves let them cook out pretty much, then squeezed the cheesecloth "gently" to get all the juice I could out of them. (See video for this)

My parents had muscadines growing on their chain link fence and my mom would make jelly every year. My son loved the jelly that his Nanny made. She also made really good pear preserves (my favorite). Thanks for sharing this video, might give it a try.

I hadn't heard of muscadine before, but they look similar to a big fat grape only firmer maybe? I used to make jelly all the time when my kids were little. I haven't made any in a long time. 1.25 ounces of pectin per cup of juice seems to work. Pectin and jars are expensive this year. I made 1.5 gallons of muscadine jelly and 15 gallons of wine. Good stuff.

I have never seen muscadines that big. And I thought the ones here in South Ms'sippi backyards were big. Now the swamp ones are usually smaller than backyard ones. Less sunlight maybe?

I made the muscadine jelly and we just finished eating all of it. (plus I gave some to family members) It has been a few months. It was delicious. Now I am looking back at this video again to make a new batch. I had frozen several bags of muscadines. Thanks so much for this video!

debican01 I was just a kid when I started eating them, they grew wild in trees on the edge of wooded areas, They were purple and a good bit larger than grapes and had a much thicker cover (which I ate too, "very good"). The best way I can describe them would be to call them a cousin to a grape.

What is the reason for the hot water bath? I thought it was a final cook in the jar, with lids off in order to get a better seal.

Go to about 4:23 on the video and I talk about putting sure-jell in the juice just before heating it. The instructions should be on the sure-jell box also. Good luck.

Jo Smith I would use the directions on the pectin your husband brought. We used powder pectin wen we made it for the video but if you use the instructions for the liquid I would think you are OK.

I just got back home from my Nature's Pearl Harvest Party in Advance, NC. I came home with (2) 3 gallon size buckets of muscadine grapes. I will be working hard tomorrow to make the jam. I have been watching alot of videos and some people use the skins too. I see you did not. Also some tell me that muscadine has natural pectin, so you don't need to add extra especially if you add the skins. Also my Nature's Pearl also uses the skins and seeds for our products. I am thinking about grinding the seed and just add that to foods that I cook. Thanks for sharing I will be using some of your techniques, especially adding the vinegar to the water. Also I have to use splenda or something in that line, because my husband and so many friends are diabetic.

+Start To Finish With Wayne I did get all mine made and it turned out great, I replaced the same amount of sugar with Stevia. I made 36 pint size jars of muscadine jam. I used the skins cooked them soft and put them in my Vitamix and turned them to mush and mixed it all together and got some beautiful jam. Yeah, I will be giving them as Christmas presents this year.
