That time is approaching us quickly. Small farmers have been warning us for months. They're all being shut down. Seems to be a large shut down on soy purchases across the industry. Something big is happening. There's a reason they teach us about Hitler but not Stalin. It seems to be happening again. The food supply is under attack. Grow it yourselves, hunt it, raise it, save it. The sensitive people will be asking for handouts very soon.

I'm so glad i grew up in the country and know where my food comes from and what it takes to get it to the table. The crap you buy at the stores these days has no flavor. My grandma used to keep track of which chickens produced and which ones didnt. if they didn't contribute they was dinner :)

People need to be protected from themselves these days. They watch an outdoors channel, and seriously don't expect to see outdoors content like hunting and processing meat, or even people being almost 100% self sustaining. Then they DO see it, and they are upset by it, so they report it, because feelings, and because Bambi had to die for them to have that nice piece of meat on their plate - if they eat meat at all! Never mind that poor onion that had a family! Simply clicking on to the next channel and not coming back to this one is not even considered as an option. Because, guess what, the content over here isn't going to change! And don't come with the "advertisers don't want to be associated with this channel's content" BS, because it is REALLY simple for KZbin to control that. Complaining and reporting gives people a feeling of power, so as long as that behavior is rewarded, it ain't going away anytime soon...

Excellent job of harvesting the wild hog meat, & making fresh breakfast sausage to enjoy thru the winter months. Great seeing Hannah, and her little companion for a taste test . Damn fine content, damn fine eating!!! I love me some wild hog sausage! Growing up we processed all our own barn lot raised meat. Hogs, belly bacon, backstrap tenderloins, cured hams 4 ways, chops, steaks, sausage. Since moving to Florida I'm more into the wild hog steaks and everything else into sausage. I prefer it above domestic hog, and have even had those say they don't like wild hog think it was great after they ate it unknowingly.

Hey Jeff here’s a tip if you want to take a couple extra minutes when you skin the hogs or deer is remove the shank at the elbow and you will never poke a hole in your bags.

Good stuff, when I lived on the farm we would butcher our own hog, put some aside for sausage then chill the meat and process it into chops, ribs, pork loin and then smoke a ham. Damn it was good stuff and typically fed a family of 5 all winter. I don’t miss the butchering, scalding and scraping the hide of hair, but I miss the homemade sausage, the prep with family in the kitchen…good times you never forget.

Hey Jeff and Hannah, another trick I’ve learned with my vacuum sealer is to moisten the soft padded gasket seal on the inside of the sealer top and bottom. Wet your finger or wash cloth and dampen the whole thing it makes better contact for a better seal.

Evidently, too many people are FAR too sensitive. I watched my great uncles butcher hogs back in the 1970's. I learned at a young age where the meal comes from. And it's takes some work to get from the hog to the table! My great aunt would sit at the bench table with a chisel in her left hand and a hammer in her right, waiting for the hog heads to come to her. She was gettin' those hog brains!

My grandparents raised and processed hogs when I was a child and that was the best sausage I ever had. Really wish I would have paid more attention to what seasoning they used.

That is a victorinox , use to be forshner , the one he has is call a skining knive , you can fined them on web or kitchen supply store , not sure i think is a 6 inch , for cutting you love a 6 icnch flex love those knives , mine are about 25, 30 years old , they last a while when take care of thm , yall take care , good jog jeff , .

Was always my favorite part, doing hogs as a kid. Cooking up samples on the old antique combo wood and gas stove we had in the basement. That and the old cast iron pan always left perfect crispy edges on the patties and just seemed to cook the sausage perfectly. Always seasoned with salt and pepper for sure but also a lot of mustard seed for sure. May have been some other seasonings, just don't remember.

Thanks guys. I grew up around meat farming. We hunted squirrel, rabbits and whatever. Today most o my hunting is at Schnuck's or Walmart. I'm old and lazy, but i still appreciate the country way of things. (I've always hated the waste of just killing wild hogs for whatever).

I used to use a vacuum sealer, but no more. I wrap my meat in Saran Wrap tightly, no air, and then wrap in freezer paper. Used a deer roast from 2014 yesterday. It was just as good as what I had in the freezer from last year. I do like my vacuum machine for dry goods in bags and mason jars using the jar attachment.

When vacuum sealing boney pieces of meat, try folding part of a bag over the bone to give a couple of extra layers of plastic to keep from puncturing the bag.

I was wondering if Hannah has been hog hunting/trapping again this winter? I want to see some videos of the hunting or her staying up at night looking at video on her phone and pushing the button on the trap's gate!
