I can't speak highly enough of this sublime cheese. I was once bought a waxed truckle for Christmas a few yeas ago and I now buy it regularly. Only true Yorkshire Wensleydale comes from the creamery in Hawes and there is simply non better. If you've never tasted it, I recommend the green waxed truckle, which I buy myself from Co-Op stores. You won't stop buying, I can assure you.

Rennet is from the stomachs of calves...so ok for vegetarians???

It's been around for yonks - a non-animal equivalent of calf rennet.

Used to be able to be imported overseas, but sadly for some reason, in 2012, shipping is only to the UK only. Which is a shame since I wanted to try the Wallace & Gromit Wensleydale! *EDIT:* Don't know if the info's outdated, but they do stock it in the following stores in the United States: Publix, Stop & Shop, The Fresh Market, Whole Foods.
