Making Salt & Straws Honey Lavender ice cream

Just got the salt & straw book and decided to give this one a try. I think you might have a mistake in the grams version of the lavender buds - half a cup for me was 17 grams so 65 seems like an awful lot more 😅. Loved your description, I've never had anything similar (except rose water flavoured stuff maybe) so very curious to see if I like it!

I never noticed that mistake, yep you’re right as I had 20g down for the lavender. That’s ok, it’s only been 2 years that mistake has been there 😂😂

Hi i've tried the xanthan gum but it seems the powder didnt disolve completely in the mixture leaving out jelly-like lump pieces. Are yours the same? Nice video btw!

Are you mixing the Xanthan with the sugars first? It sounds like you added it separately as it clumps doing it that way. You must add stabilizers to the sugar and stir well, it makes sure its well incorporated and doesn’t clump.

Suits me for being adventurous! The face I made when I tasted this... The recipe is great obviously but who wants to eat ice cream that tastes like toilet air freshener? Not me. Now I have to find someone who likes this and gift it 🤣
