Making Flavorful Salted Fish & Chicken Fried Rice
100g chicken breast fillet (diced or cut into strips)
1 tbsp oyster sauce
1/2 tsp ground white pepper
1 tbsp xia hsing cooking wine
1 tbsp cornflour
1 tbsp sesame oil
5 cups cooked rice (refrigerated overnight)
salted dried fish
chinese cabbage (about 3-4 leaves, sliced thinly)
scallions (about 3-4 stalks, sliced thinly)
2 eggs (beaten)
2 tbsp fish sauce
1. Marinade the chicken with 1 tbsp oyster sauce, 1/2 tsp ground white pepper, 1 tbsp xiao hsing cooking wine, and 1 tbsp cornflour. Mix thoroughly until the chicken has absorbed the marinade. Add 1 tbsp sesame oil then mix. This will help keep the pieces from sticking to each other, but added last to let the marinade in contact with the meat.
2. Prepare the salted dried fish by shredding it into pieces. Set aside.
3. Thinly slice the scallions, keeping the white parts separate from the green parts. Thinly slice the chinese cabbage, then set aside.
4. Crumble the rice to separate the grains (optional). This makes mixing later much easier.
5. In a large wok, add oil over high heat, then lightly cook the eggs. Remove then set aside.
6. Add about 1 tbsp of oil, then cook the chicken pieces, about 3 minutes. Stir continually, then set aside. Clean the wok if needed before the next step.
7. Add more oil (at least 4 tbsp) then lightly fry the sliced white portion of the scallions. Add the shredded dried fish, then continually stir for about 1 minute.
8. Add the rice, then stir to mix. Add the egg then mash to mix. Break the clumps of rice while mixing.
9. Add about 2 tbsp of fish sauce, then add the chicken, the remaining green scallions, and the cabbage slices, then mix very well.
