Here in the beautiful North we enjoy our beloved fish in many ways, one of the best sure is curing, by processing the fish with this absolutely amazing combo made of salt and madder, covering the delicious kutum and anchovy fish with the reddish goodness, Keeping in sealed clay pots And then we let the time do its magic.
We enjoy salted fish as a side for many northern cuisine such as Baghala ghatogh, Pamador khorosh and Torshe Tare.
