Thank you for this amazing recipe. I made this today with just one frozen mealie (I freeze the whole fresh mealies with the leaves on and use as required) and it turned out beautifully. My Mom loved it. Can only imagine how much tastier it will be with fresh mealies. A new method of steaming with the leaves and the cob. Thank you for your great ideas. Is it not possible to grate the mielies then you get all of it from. The cob nothing wasted. Very good recipe for winter. Keep your recipes going. GOD bless 🙌

Yes you can grate the mielies. I find it harder going with my arthritis so prefer to cut it off and use the machine or have Pranesh help cut the mielies as well.

Yes, absolutely. It is a little dryer so may come out to be less "ground" corn and you might have to then adjust recipe accordingly. If it is not as wet then you can also add milk.

The rule I generally I use when baking is 1 cup sugar to 3 cups flour. However in this recipe we use 1 cup flour but some of the mielies will also act as "flour". My suggestion is to use about 1/2 cup sugar to start with and then you will have to adjust with subsequent attempts. You can tie the mielie leaves up but ours did not spill out when we did it. But to make doubly sure you can definitely ties it up with some twine.

I am not sure. Like Marlene says you will not have the leaves. A possible work around would be to bake the mielie cakes but I am not sure the time and temperature settings. I have not tried idli myself either. Hazel made a steamer with muslin cloth over the pot of water in her koikutta recipe - will this perhaps work?
