Looked really good! Oven nachos are the best. Mine are similar. I cook my meat first and put everything on a sheet pan and put under broil in oven. I like these vids!

I just had a look to see if we can get impossible Meat here in Australia and yes in Woolworths apparently must try it one day we eat real meat but if I wanted to I could try it out .

For my nachos I put: those restaurant style tortilla chips, refried beans, rotisserie chicken, cheese sauce, and some shredded cheese. I put that in the oven and then top it with: pico de gallo, mexican crema, onions, cilantro, avocado, and sometimes queso fresco. My husband loves to put jalapeños and his homemade salsa verde 😋😋

Can i ask why you use vegetarian products? I've seen you cook with the items before and just wondered. I have alpha gal and can't eat any 4 legged animals. Beyond burgers are pretty good.
