Jackpot! I am a senior, 6 months into plant based and hoped I didn’t have to eat soup and salad for the last of my life. This is an easy and tasty dish that I can serve on a plate with a fork. For the white bean Verde I swapped out one can of beans for dark red kidney just for some variety. Great presentation everyone will want to eat,especially with toppings of cilantro, half cherry tomatoes, sliced black olives, and red onion. Thanks so much,

The vegan parmesan is a great tip! We still use a bit of regular parm' in certain meals, but I'm going to make up a batch of yours & start off the conversion by going half & half. Looks great! BTW the Pyrex and other glass baking dishes will shatter going from a really hot oven to a cold counter top. I always land mine on a hot pad even if the surface can take the heat.

OMG I just made the Tuscan orzo casserole. It's SOOO good! Any idea of an approximate calorie count for 1/6 of the recipe. I'm currently using Cronimeter to get an idea of how many calories I'm taking in each day. Thank you, and thanks for this wonderful recipe. Will try the others as well...

I tried the Tuscan Orzo Casserole and it was amazing. I noticed you forgot to add the 2 tsp garlic powder and 2 tsp italian seasoning you added to your broth in your printable recipe, Would you omit the minced garlic if you add the garlic powder? It was still amazing without it.

Completely unrelated to the video question. I noticed that your lower cabinets are darker and uppers are white. I’ve been thinking about doing that to my cabinets that currently are all dark. I “think, not sure” that the white uppers brighten and the dark base cabinets are lower maintenance for cleaning. Since you’re a busy mom do you find that keeping the base cabinets dark makes it easier to keep your kitchen looking cleaner than if they were all white?

Lovely Recipes. PS If you have other items that you cannot use, consider donating them to the Red Cross for disaster or fire victims or to a women's shelter. Many times, people who have been displaced and have found housing afterwards need such items and may not be able to afford to buy a lot of items to replace the ones they once had.

question. since you're already using the sauce pan for the broth, wouldn't it be more convenient to just add all the ingredients to the saucepan and cook that way, or alternately add to the saucepan, mix well, and then pour into the casserole dish to bake in the oven?

I have never understood the American use of the term "casserole" but these recipes that I would call pasta and rice bakes are useful "dump and go" recipes for everyday use. Especially the Orzo one as my partner loves pasta and rice and we often have orzo (or as our packets tend to be called risoni).

Cute story about the inscribed name on the dish. I have a family member who is a re-gifter. She forgets who got her the gift and will use it in the gift exchange at Christmas. She's also the person who used a gift someone gave her at Christmas as a baby shower game gift that I won. One of the attendees asked me where I got the gift, and I told her I had just won it in the game. She said, "I gave her that for Christmas." The look on her face was so sad. I gave it to her, explaining that I had many of that type of gift and since she paid for it, she should have it back. So, now I give this family member gifts with her name inscribed on them.

This person doesn't hold onto a gift long enough to appreciate it, then turns around and regifts it, usually in the presence of the person who gifted it to them. It's rude. If she doesn't like receiving gifts, she should let people know. She isn't someone who has a home with few things. She buys for herself regularly.

Vegan doesn’t mean healthy. Same with plant based. We are whole food plant based. Trying to avoid chemicals and sodium added to most meatless products. Works for us.

It's really easy to make your own veggie broth. I just freeze veggie scraps until I have two gallon bags in the freezer. Then you put them in a large pot, full with water and boil for 35 minutes. Then strain the liquid out and that's your broth (learned this from the Wfpb cooking show). I saw in an issue of the forks over knives magazine that you can blend the boiled veggie scraps and then freeze them in ice cube trays and use as bullion cubes. I just tried this out today, but I haven't used any of them yet, so I can't say how well it works yet. If someone doesn't want to use better than bullion though, just buy some low sodium veggie broth if you're concerned about the ingredients 🤷🏿♀️ I appreciate these recipes and they're easy to tweak to make even healthier if someone wants to.

0:40 also at 4:50 if your gas flame extends beyond the bottom surface of your pot as you demonstrate here, you're basically just wasting all the gas. Only the portion of the flame that stays underneath your pan effectively heats up the pan. All the flames that stick out beyond that surface area just burn straight up on the outside of the pot, hardly contributing anything to heating up the pot, although you might burn your hands when stirring, because so much heat just dissipates on the outside. So either turn down the flames for a more efficient burn, or use a bigger pot. This looks really silly.
